Dylan Hotel, located off Baggot Street in Dublin’s leafy south city-centre, has been a favourite haunt for stylish dinners, sophisticated drinks, and elegant parties since it opened over a decade ago. Now, one of the city’s leading boutique hotels unveils a fresh redesign by Grainne Weber of Grainne Weber Architects, which includes a new restaurant, bar, terrace, and private resident’s cocktail room.
Home to rich colours, bold geometry, and decadent detail work, the lobby of Dylan Hotel has undergone a complete makeover. On arrival, guests are greeted with Italian marble and acacia parquet wood flooring, on which sit two handcrafted side desks created by Irish furniture maker, John Lee. Designed especially for the Dylan Hotel, the side desks were crafted from Irish oak, which were fumed, ebonized and sandblasted by Lee to get both rough and smooth scalloped edges for texture. The lobby boasts opulent forest green and jade furniture, along with original Max Ingrand mid-century glass lighting fixtures, which are set against crisp, clean, and detailed columns, all of which create a serene, intimate, and welcoming space.
Designed to bring guests on a journey through the hotel, the lobby leads onto the newly designed Dylan Bar. Rich in tones and textures. Dylan Bar has walnut and burr elm paneling, which perfectly complements a beautiful tonal colour palette of orange, slate and mustard, with subtle scene setting lighting to create atmospheric silhouettes. A striking portrait, by Cian McLoughlin, is one of the many beautiful pieces of artwork that adorn the Dylan Bar, while the centerpiece, the walnut fronted bar, brings guests further on the hotel’s journey, making the eye travel into the new restaurant, The Eddison.
The Eddison is bright, airy, and spacious, with two terraces; one at the front and one at the rear of the restaurant. A moss installation, designed by Bronagh Harte of Ginkgo Flowers, hangs from the ceiling, creating a unique focal point in the restaurant – this live installation will change seasonally to reflect the foliage outdoors. Eddison’s menu change’s monthly to showcase the produce at its best and places a special emphasis on vegetables, making them the star of the dish – think salt baked celeriac, a warm salad of sprouting broccoli, and even a carrot Wellington! The restaurant will serve breakfast, lunch and dinner, as well as late night snacks.
Just off The Eddison is the hotel’s hidden gem, The Ruby Room; a cocktail bar serving a range of delicious cocktails created by the hotel’s mixology team. The Ruby Room is colourful, yet intimate, seating just 30 guests. Padded velvet wall lined paneling and deep cushioned banquets are accessorized with plush feather cushions. The floor, original mahogany parquet, complements the bold colour scheme of orange, deep red and black. Bespoke silk lamps, made by Shady and the Lamp, and custom designed table tops handmade and crafted in Donegal by The Veneerist, Ciaran McGill, create a special atmosphere in this unique hideaway.
The partially covered terrace area, The Nurserie, can be enjoyed all year round by guests. Filled with a mix of Victorian plants including tree ferns, The Nurserie is a decadent urban oasis. Pops of red and grey from the stone flooring and rope chairs will grab guest’s attention as they enjoy the beautiful evening sunshine of the south facing terrace.
