Classically trained and regionally experienced Chef Bruce Yim leads
a team of brilliant culinary minds and hands at the helm of Hacienda Del Sol Guest Ranch
Resort’s award winning restaurant The Grill, Terraza Garden Patio & Lounge, and catering
kitchen. He, Chef de Cuisine David Solorzano, Sous Chef Carlos Cuestas, and Banquet Chef
Aron Fonte, incorporate ingredients and ideas inspired by the bounty from the on-site organic
garden (inspired by Dr. Andrew Weil, designed and nurtured by owner/partner Jeff Timan) and
the herbs and citrus grown throughout the Resort’s 34 acres to present a unique selection of
New American Cuisine to diners and event guests.
The Global Alliance’s Creative Cities Network, a UNESCO program, designated Tucson as
the 2016 City of Gastronomy due, in large part, to the region’s 4,000 year agricultural history
and current practices to preserve and support culinary tradition and industry. Tucson is the
first U.S. city to receive this prestigious designation. Long prior to Tucson’s addition to the
UNESCO Creative Cities Network program, Chef Bruce and the Hacienda Del Sol culinary
team were sourcing ingredients and inspiration locally and seasonally to introduce guests to
and comfort them with the their unique New American Cuisine often accented with exotic
twists. “It is incredibly important to us that we source as many ingredients as we can locally,”
states Chef Bruce. “We communicate with the farms around us to find ingredients that are
in season and freshly harvested. We are always pushing the envelope to give the guest an
experience beyond what they are expecting.”
Hacienda chefs’ creativity and alignment with the UNESCO principles can be experienced
through the many dishes that balance the exotic with local, warm with cold, sweet with sour,
and acidic with basic. Such balance is showcased in The Grill’s dishes like Crispy Confit
Chicken, a dizzyingly delightful take on fried chicken featuring confit chicken legs braised with
fat, rosemary, garlic, thyme and sage, cured for hours then deep fried and seasoned to order
with Espelette and garnished with pickled ramps. Other favorites have included a delectable
Marinated Hamachi (Pacific yellowtail), served with a fennel puree, garnished with shaved
fennel, orange Supremes and lemon jelly; or Striped Bass Meuniere dressed in parsley lemon
butter and accompanied by rice Pilaf, confit tomato, and Heirloom cauliflower. While Chef
Bruce and his team recreate the menu based on the season and finely tuned whim, year-round
traditional indulgences like the grilled New York Steak and Rack of Lamb are mainstays.
Offering homage to local flavors, Terraza Garden Patio & Lounge menu offers a hearty and rich
Wagyu beef burger, complimented with roasted chilies, apple wood smoked bacon, organic
lettuce, local tomatoes, red onion, and garlic aioli; and the Terraza Turkey sandwich featuring
apple wood smoked bacon, local tomato, butter lettuce, and chipotle aioli. In fact, locally grown
ingredients are featured throughout the menu including herbs and citrus fruit harvested from
the Hacienda Del Sol Chef’s Garden and around the resort’s grounds.
While the recent multi-million dollar expansion of the Hacienda Del Sol Guest Ranch Resort
added 32 guest rooms and amenities to enhance the guest experience, so were tools to
enhance diners’ experiences. A Rationale double oven – “The Mercedes-Benz of ovens”
according to Yim – was installed to ensure banquet (wedding, meeting, conference) guests also
receive an elevated culinary experience. “This oven allows us to be more creative and complex
with banquet dishes and ensure that each dish is served at the ideal temperature and at its peak
of freshness,” commented Chef Bruce.
Hacienda dining venues are locally and nationally lauded, having received kudos including the
AAA Four Diamond Award, and from Tucson Lifestyle Magazine: “Top Five Restaurant,” “Best
Brunch,” “Best Romantic Dining,” “Best Wine List,” “Best Dining with a View,” “Best Restaurant
for Out-Of-Town Guests,” and “Best Longtime Favorite.”
Not to be outshone, the Hacienda Del Sol wine cellar delivers palate pleasing liquid luxury with
over 900 labels and 6000 bottles of wine hand selected by the Resort’s owners and Director
of Wine and Spirits, John Kulikowski. With origins ranging from the Bio Bio Valley to Bordeaux,
Argentina to Spain and Arizona to Main, the expertly chosen, presented, and paired vintages
have earned the Hacienda “The Award of Ultimate Distinction” by Wine Enthusiasts Magazine
and “Best Of Award of Excellence” designation from Wine Spectator for 16 consecutive years.
There is the possibility of connoisseurs of the fermented fruit, grain, and berry becoming
blissfully lost in the wine list for years at Hacienda Del Sol. However, one is encouraged to look
past the grape to the veritable cornucopia of beers, liquors, and expertly crafted cocktails
presented by Terraza Garden Patio & Lounge mixologists. From Michigan’s J.K.’s Scrumpy hard
apple cider to a variety of Arizona born IPAs and microbrews including Tucson’s Barrio Rojo,
cider and hops are well represented. Similarly a variety of Rye Whiskey and decadent Single
Malt Scotches from 12 to 21 years old will tempt one with a penchant for the smooth warmth of
the grain-derived gold. Guests with an appetite for an expertly blended concoction will enjoy
treats like the Dudley Do-Wrong with Crown Royal Canadian Rye, Carpano Sweet Vermouth
Bitters, and Luxardo Cherry; the Chipotle-Cilantro Margarita with Blanco Tequila, Hacienda
Sweet ‘n’ Sour chipotle puree, fresh cilantro, agave nectar, and Triple Sec on the rocks; or a
classic Manhattan, Moscow Mule, or Old Fashioned.

History of Hacienda Del Sol Guest Ranch Resort
In 1929, John and Helen Murphey created Hacienda del Sol, a desert retreat and “home away
from home” ranch school for girls. The prestigious school’s roster boasted some of the country’s
most elite families: Vanderbilt, Pillsbury and Westinghouse, to name a few. In 1948, Hacienda
del Sol was converted into a guest ranch that immediately attracted the Silver Screen’s most
notable stars, among them John Wayne and Clark Gable. Legend has it that Hacienda’s Casita
Grande was the favorite hideaway of Spencer Tracy and Katharine Hepburn. Professional
baseball players Lou Boudreau, Hank Greenberg and well known golfers, Sam Snead, Horton
Smith, John Bulla and Don January enjoyed the ranch in the 1940’s. In 1995, Hacienda del Sol was
purchased by a group of local investors and became the Hacienda Del Sol Guest Ranch Resort.
